This is super easy and makes a large batch - you can keep the batter in the fridge for several weeks and make the muffins when you need them.
Place applesauce and sticks of butter in large bowl and heat in microwave until butter is melted (approximately 5 minutes - stirring after each minute). Mix all ingredients together.
Bake at 350 degrees - mini muffins for 10-15 minutes, regualr muffins for 20-25 minutes.
This mixture may be kept in the fridge for several weeks. It makes a large batch.
Original recipe called for regular applesauce + 3 tsp cinnamon, 1 tsp ground cloves, & 2 tsp allspice (we don't care for that much spice).
