A delicious sweet bread not entirely devoid of nutrition.
Thoroughly grease a 9" x 5" loaf pan. Mix the sugar, oil, egg, vanilla, cinnamon, and apple butter together in a medium-sized bowl. Mix the flours, wheat germ, baking soda and salt in a separate small bowl and stir into the wet ingredients. Fold in the chopped apples and the walnuts. Bake at 350° for one hour.
I used red delicious apples but any kind of sweet firm apples should work. I don't recommend mealy varieties for best results. You could probably substitute unsalted melted butter for the canola oil for better taste but I haven't experimented with this.
