Very tart, but very good.
In a mixing bowl, beat the eggs, sugar and oil. Combine the flour, baking powder, cinnamon, baking soda and salt; add to egg mixture just until combined (batter will be very thick). Stir in teh apples, cranberries and nuts.
Transfer to an 8X4X2 inch loaf pan coated with non-stick spray. Bake at 350? for about one hour or until a toothpick inserted near center comes out clean. Cool before removing loaf from pan.
Very tart. If sweeter bread is desired, add 1/2 cup more of sugar or coat apples in sugar before adding to mixture.
