These muffins freeze wonderfully. Put in a airtight container.
1. Whisk dry ingredients together. Set aside.
2. In a stand mixer, mix wet ingredients, except water, until mixed.
3. Slowly add dry ingredients to the wet, mix on low. Add warm water, a little at a time, until the dough is moist and thick,but still capable of being "poured" into the muffin tins like a traditional muffin batter. It's OK if you don't user all the water, or if you need to add a touch more.
4. Fold in pie apples.
5. Mix topping in a small bowl with a fork until crumbly.
6. Scoop muffin batter into greased or paper-lined muffin tins.
7. Add about 1 tsp of topping to each muffin, spreading evenly.
8. Bake in 350 degree oven for about 25 minutes.
