ADD GRANULATED SUGAR, SALT, GROUND CINNAMON AND GROUND NUTMEG. BRING TO A BOIL; REDUCE HEAT; SIMMER 15 MINUTES OR UNTIL APPLES ARE TENDER. DO NOT DRAIN; USE APPLE MIXTURE IN STEP 5. 3. COMBINE CORNSTARCH AND WATER; STIR UNTIL SMOOTH. ADD GRADUALLY TO BOILING MIXTURE. COOK AT MEDIUM HEAT, STIRRING CONSTANTLY, UNTIL THICK AND CLEAR. REMOVE FROM HEAT. 4. FOLD APPLES, LEMON JUICE, AND BUTTER OR MARGARINE CAREFULLY INTO THICKENED MIXTURE. COOL THOROUGHLY. 5. POUR 3 1/2 CUPS FILLING INTO EACH UNBAKED PIE SHELL. 6.
