Combine sugar and cornstarch in large stock pot. Add water, cinnamon, and extract. Heat on medium until it boils and thickens. Add lemon juice and boil 1 minute. Fold in apples. Fill quart canning jars to 1/2" from top. Process with waterbath for 40 minutes.
