Saute mushrooms and green onions in butter until tender; Drain, if necessary, and set aside.
Layer half each of bread cubes, vegetables (mushrooms, green onions, cheese, artichokes, and pimento in a lightly greased 9-inch quiche dish. Repeat layers.
Combine eggs and and remaining ingredients; stir well. Pour mixture over quiche; cover and chill for at least three hours.
Remove from refrigerator; let stand 30 minutes.
Bake, uncovered, at 350*F for 50-55 minutes (until set). Let stand 10 minutes before serving.
