Trim fat from thighs and mix all ingredients. Combine chicken with marinade. Make sure each thigh is well coated. Place on baking sheet and bake 20 to 30 minutes. Sprinkle fresh chopped cilantro on top. Serve with spicy papaya salad and sticky rice, on a salad or alone with a side of veggies. Enjoy.
