Recipe from “Quick Cooking with Pacific Flavors” by Hugh Carpenter and Teri Sandison
Remove any bones from fish (using tweezers), transfer to non-reactive bowl. Combine all marinade ingredients and mix well. Add to salmon, turning over to cover. Marinate 15 min. to 2 hours.
Preheat broiler. Brush broiler rack w. oil. Place salmon on rack, brush with some of marinade on top. Broil 4 min. on one side then turn. Brush with marinade and broil for an additional 4 min. (If the salmon is especially thick I sometimes broil as much as 5 or 6 min, but no more or it will dry out.)
While broiling –simmer remaining marinade.
Serve with lemon wedges. Use warmed marinade on either salmon or rice.
