I am not sure who Aunt Eileen is. Carla seems to think it is Eileen Gray. She would be grandpa Nay's cousin.
Mix ingredients except for powder sugar and flour. Start on low. When 1/2 mixed add sugar gradually. When sugar is all in turn mixer to high and beat until stiff. Fold in flour slowly.
Bake at 375 for 35 to 40 minutes.
