2. In medium saucepan, heat 1.5" oil until it registers 375 on a deep-fry thermometer
3. Meanwhile, mix flour with 1/4 tsp salt in a shallow plate. Put eggs and panko in separate shallow plates.
4. Dip avocado in flour, then egg, then panko. Set aside in single layer.
5. Fry small batches at a time until deep golden, 30-60 seconds. Transfer to a plate with paper towel. Keep warm in oven while cooking remaining avocados. Sprinkle with salt to taste.
Suggested to season before frying. Italian Panko, garlic powder, etc.
