Suggest a better descriptionIn a dutch oven, warm 3 tbsp olive oil over med-high heat. Add the garlic, mustard seeds, and bacon and saute until the bacon is golden brown and crisp, 2-3 minutes.
Add the brussels sprouts and cook, stirring occasionally, until they begin to turn golden brown, about 5 mins. Season with salt and pepper. Pour in the broth and bring to a boil. Reduce the heat to low, cover, and simmer until tender, about 10 mins.
Meanwhile, in a 10-inch frying pan over med-high heat, warm the remaining 2 tbsp olive oil. Add the onions and saute until dark golden brown, about 5 minutes. Stir in the honey. Reduce the heat to low and continue to cook, stirring occasionally, until the onions are soft and caramelized, 5-5-8 minutes.
Uncover the brussel sprouts and cook until the liquid is reduced by one-fourth, about 5 minutes.
Top the brussels sprouts with the caramelized onions and serve right away.
