Preheat oven to 200?.
Place sweet potato and onion slices in baking dish. Top with chicken breasts.
Combine vinegar, sugar, capers, lemons, tomatoes, basil, oil and garlic.
Spoon over chicken and bake for 20-25 minutes.
Remove from oven and rest for a few minutes before serving with rocket salad.
Toss rocket and tomatoes. Scatter with slices of goats cheese.
