2. Roughly chop onion, garlic, carrot, celery.
3. Boil lentils with chopped ingredients, salt, pepper and bay leaf in a COVERED pot until lentils cooked and water evaporates out.
4. Switch off and let cool. Remove bay leaf.
5. Preheat oven 375°F.
6. Pulse rolled oats in food processor to form oatcrumbs.
7. Add lentils to food processor with oat crumbs. Also add the egg. Pulse until combined.
8. Form into patties. Place on parchment paper on baking tray.
9. Bake for 15mins, flip, then bake for a further 10mins.
10. Serve with wholewheat hops bread.
Can add toppings, eg lettuce, tomatoes, ketchup, if desired. (Avoid cheese.)
11. Wrap sandwich in napkin then foil for an on-the-go meal.
