Slice onions finely
Slice garlic thick
Soak tamarind in 1/2 cup water
Drain and dissolve in shrimp paste
Grind shrimp to a powder
Heat oil and add turmeric. Brown onions and set aside.
Fry garlic to light brown and set aside.
Fry powdered shrimp but not too dark. Drain
Pour out oil and clean wok. Return 2 teaspoons oil. Add tamarind and shrimp paste liquid and a pinch of turmeric.
As liquid reduces add chilli powder and stir until it darkens
Return shrimp. Mix 1 minute. Add salt if needed cool and mix in onion and garlic. Bottle and store.
