Got some leftover barbecue meat? Tacos are one great way to use it up, but you can also do barbecue bowls.
For the grain - rice, quinoa, farro, or whatever you choose. Prepare according to package instructions.
For the beans - canned is fine. Classics would be pinto or black beans, but you can do others. Or try refried beans or baked beans!
For the tomatoes - a simple diced tomato would be fine, but you can switch it up with pico de gallo, a chunky salsa, or similar.
For the corn - canned or thawed frozen corn is fine, but you can also char some corn on the cob and cut the kernels off the cob when finished if you like.
For the peppers - diced bells are great, or if you like something spicier any chili pepper is great.
For the cheese, use whatever cheese floats your boat - shredded cheddar, crumbled cotija, pepper jack, whatever you have on hand will be fine.
For the onion - red onion is a particularly good choice, but any onion will do.
For the pickles - a pickle relish or a pickle chip for some acid is an excellent choice.
For the meat - you probably want to use small chunks or a shredded / pulled / chopped meat. Pulled pork, brisket dice, rib meat pulled off the bone, all these would be good options. But there are no rules.
Assemble your bowl by putting the grain at the bottom and at least 3 or 4 of the ingredients above the meat. You don't have to use them all. Top with your meat and then pour some sauce on top of that. You can use as much or as little of these ingredients as you like, but a good place to start would be 1 cup of cooked grain and 1/4 pound of meat.
