Suggest a better descriptionBrine: Mix Brine Ingredients in a 2 gallon resealable plastic bag. Add chicken and seal. Chill for 2 hours.
Sauce: wrap bacon around thyme and tie with kitchen twine. Heat oil in sauce pan over medium heat. Add thyme bundle and cook 3-4 minutes. Add onion and garlic. Cook over medium low heat, stirring until softened about 5 minutes. Stir in remaining ingredients and cook over low heat, covered, 20, minutes. Remove thyme; spoon 1/2 of sauce into a bowl.
Grill Chicken: Preheat grill to 300/500 (cool side / hot side). Wipe grills with oiled paper towels. Pat chicken with more paper towels, sprinkle with salt and pepper, and drizzle with some oil. Grill chicken skin down on high heat area for 5-7 minutes. Move pieces to cooler area, turning over. Spoon sauce on chicken and cook for 20 minutes. (keep grill temperature between 300-400). Flip chicken and spoon on more sauce. Set timer for 15-20 minutes but check after every 5 minutes for temperature of 160. Remove and let cool for 5 minutes. Serve with sauce in bowl.
