In a large skillet, heat olive oil and brown beef until cooked through; season with salt and pepper.
In a bowl, combine ricotta, 2 cups mozzarella, and parmesan cheese. Stir well.
Spray a 9x13 inch baking dish with non-stick cooking spray. For the bottom layer, pour one cup of sauce and spread evenly.
Top with 3 sheets of lasagna (the sheets will expand to the edges when baking)
Pour 1 cup sauce and 3/4 cup of the cheese mixture on the first layer, top with 1/4 cup of the mozzarella and 1/3 cup of the cooked meat. Continue for three more layers.
For final layer, top with 3 sheets of lasagna, pour the remaining sauce, top with remaining cheese mixture and mozzarella.
Cover with foil and place in oven for 25 minutes. Once baked, remove foil and bake and additional 5 minutes to brown the cheese. Let rest 15 minutes before cutting.
