Light, thin French-style "pancake"
Place on the ingredients in a medium bowl and whisk until we'll blended. I have tried different methods to mix, but the whisk is by far the best. The batter is very thin and there should be few, of any flour lumps.
Heat a pan on the stovetop to medium-high. I prefer a cast iron pan. Lightly oil the pan (1-2 teaspoons) and place 1/4-1/3 cup of batter in the pan, depending on pan size. Gently role the bater in the pan to spread the batter. Cook until light brown and flip in pan for 30sec. Serve with desired toppings - fruit, syrup, etc...
