Suggest a better descriptionPreheat oven to 350 degrees. Place chicken breasts on baking sheet. Loosen skin from meat leaving one side attached. Place 4 basil leaves under the skin of each breast. Pull the skin over as much of the meat as possible. Rub chicken with EVOO & sprinkle generously with salt & pepper. Bake chicken for 35-40 minutes until cooked through. Set aside until cool enough to handle. Remove meat from bones & cut into large diced pieces. Set aside. Melt 4 Tbsp butter in large sauté pan. Add potatoes, onions, 1 tsp salt & 1/2 tsp pepper & sauté over medium heat for about 10 minutes, until browned & cooked through. In separate sauté pan melt remaining 2 Tbsp butter. Add red bell peppers, garlic, thyme, paprika, tomato paste, 1 tsp salt & 1/2 tsp pepper & sauté over medium heat for 5 minutes, until edges of peppers are seared. Add chicken & pepper mix to potatoes & heat through. Add scallion & parsley. Toss together.
