I Pat the steak dry with kitchen paper Mix the chilli powder ground cumin and garlic salt together then rub all over the steak. Set to one side while you prepare the rest of the ingredients (it's nice to place everything in small bowls so that you can assemble your fajitas at the table).
2 Heat a small nonstick frying pan with the oil. When smoking hot add the steak and cook for I 'A-3 minutes on each side, depending on how well done you like your meat. Put it on a plate and leave to rest for a couple of minutes, then slice thinly.
•'{ Warm the tortillas through, then assemble 2 fajitas each. Add a little watercress, a spoonful of salsa, the sliced steak and avocado, then a sprinkling of spring onion and some coriander Squeeze some lime over roll up and eat. Have plenty of kitchen paper to hand!
