Slow Cooked beef
• Take some flour, salt and pepper and dried herbs of your choice, put in plastic bag and place the beef chunks in. Coat and then pan fry in some olive oil until browned on all sides. May need to do this in 2 batches.
• Put meat in slow cooker.
• Add onions to the pan and brown for about 5 or so minutes, add garlic and tomato paste and cook for a few minutes. Take a few tablespoons of the flour from coating the beef and add to pan and cook this off for a few minutes.
• Add can of Guinness and beef stock and heat through.
• Put this in slow cooker.
• Add veggies and thyme.
• Cook on low for about 7 hours.
• Add frozen peas and dumplings (if you want)
• Cook for another 45 minutes or until dumplings look cooked. PARSLEY DUMPLINGS 1 cup SR flour 50 Gm softened butter 1 egg beaten slightly 1/4 cup coarser grated Parmesan 1/4 cup chopped parsley or 1/3 cup finely chopped Sun Dried tomatoes 1/4 cup milk Rub flour and butter together, then mix in other ingredients. Drop tablespoons onto hot mixture for about 20 mins.
