Different, rich and delicious. This tender beef role with sausage, cheese and spinach bathed and cooked in marinara sauce makes for a wonderful unique dish. Serve with pasta.
Preheat oven to 375 F (our oven) 350 for other ovens.
Spread out beef.
Spread a thin layer of Bousin cheese over the beef but not to the edges. Leave edges clean of all ingredients so they fold over easily and ingredients don't leak out.
Spread a thin layer of spinach over the cheese.
Spread a thin layer of bruschetta or tapenade on top of spinach.
Add a layer of very thinly sliced Ukrainian sausage.
Spread a thin layer of red pepper spread.
Fold the edges of the beef in on top of the ingredients then roll into tight roll. Secure the roll with baking twine or skewers.
Place the rolls in a lightly oiled casserole dish deep enough to allow marinara sauce to fully cover the beef rolls with space so sauce doesn't leak out the top when the casserole is covered.
Bake rolls in oven 40 minutes to 1 hour 15 minutes depending on how well cooked you like your beef.
There should be enough sauce in casserole dish to spoon over whatever type of pasta you decide to serve as a side.
Make sure you tuck in the edges well so the fillings don't leak out when cooking. A little leakage is okay as it just makes the sauce richer but it looks best when the fillings show when the beef roll is sliced open.
