Toss the cheddar cheese with cornstarch.in a medium size sauce ,bring 1/2 cup beer to a simmer. Then add cheese and cornstarch mixture and whisk until it starts to thicken. Once thick turn off the heat. Slice a small piece of your dough,roll it into a ball flatten. Pick up the bottom edges and bring them up . Continue bringing the edges until sealed. Bring 5 cups of water to a boil in a medium pot. When you've putting together your bites, add the baking soda to water and immediately scoop in the pretzel bites. Boil for 20- 30 seconds,then take out and place on parchment paper. In a small bowl whisk egg and 2 tbs. beer together. Brush this onto pretzels, then top with salt. Bake 15-20 minutes until browned.
