Use fresh tart apples
Preheat oven to 450.
Roll out 1 pastry-use ready to serve- & line a 9" pie pan. Brush with egg white
Peel & slice apples into large bowl.
Mix together the sugar, flour, nutmeg & salt, pour over applies & mix well.
Place sugared applies into the pastry and dot with lemon rind and butter.
Roll out top crust & place over apples.
Press edges together.
Prick top in several places.
Bake in 450 oven x 15 min; then lower to 350 & bake for 45 minutes more.
