Suggest a better descriptionIn a large bowl, combine beans, corn, bell peppers, garlic, scallions, shallots, salt, cayenne, sugar, oil, lime zest, lime juice, & 1/2 cup cilantro. Mix well, cover and chill for a few hours or overnight.
Right before serving, add avocado and mix gently, being careful not to mash the pieces. Garnish with chopped cilantro. Serve at room temperature.
Note: Instead of canned beans, Oregon cooks can use Better Bean's Cuban Black Beans,which are sold at New Seasons, Whole Foods, Zupan's, and some local food co-ops. The cooked and refrigerated beans are seasoned with onion, poblano pepper, coriander, and oregano, which give a layer of depth to this salad. Use two 14-oz cartons--no draining and rinsing required.
