In Mexico, the undisputed national sauce is mole, an intoxicating blend of chocolate, chiles, garlic, onions and nuts and so much more. This recipe uses bottled mole sauce to speed things up. Don't let the simple look of this recipe fool you; your family will think you slaved over these delicious enchiladas all afternoon!
In a sauce pan bring mole sauce and water to a boil. Simmer until reduced by 1/4.
In a heavy skillet, heat tortillas one at a time on both sides. Using tongs, dip tortillas into sauce.
Lay tortilla on counter and fill with 1/4 cup beans, two teaspoons ricotta and one slice of tomatillo.
Roll tortillas up and place into baking dish. (Tortillas may be folded if you prefer.)
Evenly pour remaining sauce over enchiladas.
Top with Cheddar cheese if you wish and bake at 350F for 30 minutes.
Drizzle top with sour cream, sprinkle with cilantro, and serve.
