This is the best version of zucchini bread I’ve found. The crust is amazing! It’s slightly sweet so you are welcome to cut back on the sugar but it’s delightful!
Preheat oven to 350 degrees. Grease loaf pans. Beat together sugar, eggs, oil and flavorings and zest then add drained and patted dry as possible zucchini. Add dry ingredients and mix a couple minutes. Fold in blueberries and put into three classic loaf pans. Bake 50 minutes or until a knife comes out of the center clean. Cool 20 minutes then take out of pans.
Make sure you peel, shred and DRAIN the zucchini and Pat with paper towels or squeeze out all the water. You can cut some of the sugar if you prefer but I love this exact recipe. Hope you enjoy!!
