We discovered Bobotie at the Xugana Island resort in the Okavango Delta region of Botswana. We loved the flavors of ground beef with curry and chutney. When we got home, we modified it to make it gluten free so the whole family could enjoy.
Preheat oven to 325 degrees.
Soak the bread in milk, squeeze out any excess, reserve the milk.
Melt the butter in a skillet and saute the onion until soft and translucent. Stir in curry powder, ground beef, raisins, lemon juice, chutney. Season with salt and pepper. Cook for 8 to 10 minutes, continuously stirring to brown the meat.
Take off heat, stir in the bread so that the pieces are distributed and transfer the mixture to a shallow casserole dish. Fold in a few bay leaves.
In a small bowl, beat the egg with the reserved milk. Pour over the mixture in the casserole dish.
Bake at 325 degrees for 30 minutes.
Remove from the oven. Take out the bay leaves before serving over rice.
