A simply stunning color, this classic Russian soup is the perfect dish to serve when you want to offer something a little different.

Chop all the veg and add the butter and a cup of stock and cook for about 15 minutes
Add the cumin, thyme, bay leaf, lemon juice and season.
Simmer for about 30 minutes
Strain and purée the veg in a food processor.
Return the veg to the rinsed pan, add the liquid back, reheat and check seasoning.
