Rub ingredients over roast and let sit 8 hours.
Preheat oven to 400 degree oven.
Heat olive oil in dutch oven over medium heat. Add onions and apples. Season with salt and pepper. Cook stirring regularly for 10 minutes or until onions are translucent and apples are starting to soften. Center roast fat side up on top of onions and apples. Pour any liquids and rub that has accumulated over the pork. Roast uncovered 45-55 minutes, basting a couple of times or until meat thermometer registers 135-140. Let roast stand a few minutes before slicing. Serve with apples and onions.
