Suggest a better descriptionPlace the apples and 75g (3oz) of the sugar in a pan, cover and slowly bring to the boil. Simmer for 4-5 minutes or until soft. Remove from the heat and cool. Place the quark, custard and remaining sugar in a large bowl and beat together until smooth. Place the apple juice and brandy in a shallow bowl. Mix together the chocolate and cocoa. Dip half the sponge fingers in the apple juice, then place in the base of one large or 4 individual glass dishes. Spoon over half the apple and a third of the chocolate mix. Spread over half the cheese mixture. Repeat the layers, then sprinkle over the remaining chocolate. Chill for at least 1 hour in the fridge. Serve cold.
