Suggest a better descriptionBring water, 1 cup sugar, lemon peel, and vanilla to boil stirring to dissolve sugar. Add dried cherries or whatever you use, and simmer for 1 minute. Remove from heat. Scrape vanilla seeds into mix, add bean and let stand overnight.
Preheat oven to 350. Place bread in bowl and toss with melted butter. Transfer to cookie sheet and bake until lightly toasted, 10 to 15 min. DO NO BURN. May need to stir. Reduce oven to 325 to bake the dessert.
Butter and sugar a 10 cup 3 1/4" deep shuffle dish. Combine milk, eggs, and 1/2 cup sugar. Add bread cubes.
Drain the dried cherries, discard the vanilla bean and add to bread mixture. Pour into dish.
Combine 1/2 sugar and cinnamon in bowl. Sprinkle over top of bread. Cover with foil. Bake until pudding is just set about 1 hour. Cool 15 minutes. Serve with vanilla ice cream, whipped cream or cream anglaise and brandy sauce.
(Used 1/2 cup sugar with dried cherries and eggs - could go with less)
Caramel Rum Sauce: 1 batch for 1 recipe pudding
1/2 cup sugar
1/2 cup brown sugar
1.2 cup whipping cream
1/2 cup butter
1/4 cup rum (Do not double if double recipe)
Combine sugar and cream in top of double boiler. Cook 1 1/2 hrs over gently simmering water (add water as needed).
Add butter and cook 30 min. remove from heat and beat well. Add rum. Serve warm over cake, ice cream, or bread pudding.
