It's a lot of work no doubt. But it is worth it; You get a lot of meals out of this. Besides, it's really good.

PREP
Combine spices in a bowl, set aside
Combine chedder and white cheeses in a bowl, set aside
Set aside morzzela in a bowl
Preheat the oven to 350 degrees F.
Cook bacon in the oven until not quite crispy, set aside
Peel and slice potatoes, 1/8"
Add a teaspoon of lard to a large frying pan
Add 2 table spoons butter to the pan
Fry potatoes until almost done, just turnng brown
Remove from heat and set aside
Scramble eggs, set aside
GRAVY
Preheat large heavy bottom pot.
Add the sausage and cook, stirring and breaking the meat up into bite-size pieces,
Continues cook while stirring until the sausage is browned, about 8 minutes.
May need to add oil if the meat is lean
Deglaze with white wine.
Stir in spices.
Sprinkle the flour over the cooked sausage, and stir until it is completely absorbed.
Deglaze with white wine
Add 2 cups milk and stir until it starts to thicken.
Stir in the remaining 2 cups milk, bring to a simmer stiring until the sauce is desired thickness.
Add 1/4 cup Parsely
Remove from theat and let cool.
ASSEMBLE
Spray a 9 X 13 backing dish
Spread about 4 tablespoons of the sauce (without big pieces of sausage) over the bottom.
Layer potatoes slices over the top
Layer of cheese
Spread layer of sausage.
Add layer of potatoes
Spread a laver of scrambled eggs
Sprinkle with cheese
Add layer of pototoes
Cover with bacon
Add layer of potatoes
Add layer of Mozzarella and Parmesan cheese
Cover with foil
Refrigerate over night
FINAL
Preheat the oven to 350 degrees F.
Bake until the cheese is melted and bubbly, about 45 minutes.
Uncover the dish, and continue to bake until slightly browned, 10 to 15 minutes.
Top with the parsley and a sprinkle of black pepper.
Let sit for at least 15 minutes, then slice and serve.
Shredding Mozzarella in food processor broke the bowl!
