Spray 24 muffin cups with cooking spray
Add egg whites to bowl
Stir in ground turkey, spinach, peppers, garlic, onion powder, cayenne pepper, salt and pepper
Ladle the egg mixture into prepared muffin cups to about 3/4 full
Bake until firm in the middle about 25-30 minutes
Stir in air tight container and wrap in paper towel and cook in microwave for 30 seconds
