Preheat oven to 435C
Put potatoes in a medium pot just covering with salted water.
Combine onions and ham in a skillet on medium heat, stir occasionally until onions are soft and ham is barely browned
Whisk eggs and whites, season to taste.
Cook eggs in medium skillet on medium, continually scraping, until firm.
As soon as potatoes come to boil, remove and drain, don't boil for any amount of time.
Return to empty pot, add oil and spices and toss until all are well coated.
Spread on greased baking sheet and put in oven.
Set timer for 10 minutes.
Flip and toss potatoes at 10 minutes and set timer for 10 minutes
Remove when browned as desired
Add eggs to ham skillet.
Add red peppers and stir all to combine.
Cover with shredded cheese, cover and turn heat to low.
When cheese is melted serve with potatoes on the side.
