1. Mix the ground beef, soy sauce and pepper in a large bowl.
Divide this mixture into 4 even balls. Flatten each ball into a 4-inch
patty; flatten each piece of cheese to fit on this disk with at least 1/2-
inch of meat around the cheese. Make a “sandwich” with two patties
and the cheese between them, sealing the edges and compacting the
patties into a traditional “burger” shape.
3. Warm 1 tablespoon oil in a large nonstick skillet set over medium heat.
Add the burgers and cook for 8 minutes for medium-rare or 10 minutes
for medium, turning once. Transfer the patties to a cutting board and
tent with foil to keep warm.
4. Add the remaining 1 tablespoon oil to the skillet. Add the onions and
cook for 12 minutes, stirring occasionally, until they soften and begin to
brown along their edges.
5. Add the shredded Brussels sprouts and cook, stirring often, for 3
minutes until wilted. Add the vinegar and scrape up any browned stuff
on the bottom of the skillet.
6. Transfer the patties to two serving plates. Divide the onion mixture
evenly on top of the burgers.
