1) Start a large pot of salted water on the stove over high heat. When it boils, add Mafaldine pasta and cook about 10 minutes, until al dente. Put in a colander to drain.
2) Meanwhile, put cleaned shrimp in a bowl. Drizzle with Avocado oil and then add a mixture of Lemon Pepper, Old Bay and Smoked Paprika. Mix well to adhere seasoning to all shrimp. Set aside.
3) Add 1 tbl. oil and 1 tbl. butter to skillet, then drop the shrimp into a large skillet over medium-high heat. Cook for 90 seconds on each side. Remove to a platter to keep warm.
4) In the same skillet, add remaining butter, and then add garlic paste, tomato paste, Italian herb paste, and Cajun seasoning, and stir to combine. Add heavy cream and Parmesan cheese, and let it thicken. Add fresh spinach and let it wilt into the mixture.
5) When the pasta is done and drained, add to the sauce in the skillet, then add more Parmesan cheese.
6) Plate pasta and sauce, top with shrimp. Add a little more sauce, a little more Parmesan cheese, and some fresh parsley to garnish. Serve hot with bread and a green salad. DELICIOUS!!
