Woodstock New York Memories!
Coat a large bowl and a small baking sheet with nonstick spray. Proof water, yeast and ? tsp sugar in a small bowl. Let stand for 15 minutes then stir in oil. Blend 1TBS sugar and salt in food processor. With the maching running, slowly add yeast mixture and process until a ball forms around the blade (10 seconds). Gently knead on a well-floured surface until smooth, then form into a ball. Place dough in prepared bowl, cover with plastic - let rise 1 hour. Punch down, divide and shape. Place on baking sheet and let rise 40 minutes before rolling.
Cook Sausage, drain. Add all other ingredients, except pepperoni. Place in middle of calzone dough, add pepperoni. Crimp and bake. Brush with oil, parmesean and parsley while hot.
Cook chicken and shred. Mix with cheeses, spices and spinach. Crimp and bake. Brush with oil,parmesan and parsley while hot.
Double dough if making both chicken and meat.
Preheat oven to 500?. bake 10-15 minutes or until golden.
