Excellent with the Cajun Mayonnaise recipe
Melt 1 tablespoon butter in large skillet and saute onion, garlic and red bell pepper until wilted.(about 2 minutes) Add cayenne, cream, and Dijon Mustard. Cool slightly. Add beaten egg, basil, parsley, 1/2 cup bread crumbs, and crab meat. Mix lightly and mold into16 two inch wide patties.
Combine half cup of bread crumbs and parmesan cheese in a shallow dish. Roll patties in crumb and cheese mixture. Chill at least 1 hour. Can be made a day ahead.
Saute 3 minutes each side over medium heat.
