Very good, even @ 9000 ft.
Mix together all dry ingredients. Beat eggs and add oil. Combine dry and wet ingredients.
Add carrots, nuts and pineapple. Pour into 3-9" pans lined with parchment paper sprayed with pam.
Bake @ 350 for 25-30 min. Test.
@altitude, 375 for 30 min. Rotate pans @ 15 min for even baking.
Cream together cream cheese and butter. Add sugar and beat will. May not take all of powdered sugar.
Watch how it is baking. Don't overcook. Test with toothpick to center of each pan. Done when it comes out clean.
