To save time: Roast or slow cook sweet potatoes or carrots ahead of time.
Preheat oven at 350 degrees. On jelly roll tray roast sweet potatoes with skin- set timer for 15 minutes. While potatoes are roasting peel carrots and ginger. Place ginger in blender or small food processor with a 1/4 cup of vegetable broth and blend well. Finely chop cashews and set aside for topping. After 15 minutes, carefully place carrots on jelly roll tray with tongs and hot pad and continue to roast both sweet potatoes and carrots for an additional 15 minutes. Warm up both boxes of vegetable broth in large soup pot on low to medium heat and add ginger from blender. When vegetables are done, let cool enough to handle. Peel sweet potatoes. Chop carrots and quarter sweet potatoes. Place veggies in soup pot and mix with hand-held blender. Add cinnamon, nutmeg and salt to taste. Let simmer for 10-15 minutes or until ready to serve.
Serve with a sprinkle of cashew nuts on top if you wish.
Variations: add a bit of sautéed onion and celery or add a bit of honey and coconut flakes on top for a sweeter version
Always use fresh ginger root, not ginger powder.
