Restaurant worthy! Delicious served over rice.
Shake the cornstarch and pepper in large zip bag. Add chicken and coat really, really well. This makes all the diffence so do it well.
Heat oil in skillet (M-H) and brown chicken for 2-3 minutes on each side. Now put chicken in your crock pot.
Combine soy sauce, vinegar, ketchup, sweet chili sauce, garlic, ginger, pepper flakes and pour over chicken. You can add the cashews now for softer results or add later to keep them crunchier. ( I add mine about 2 1/2 hours in.)
Cook on LOW 3-4 hours.
Serve over rice.
