Bake catfish in a 350 degree oven for 10 to 12 minutes, or until done. Cool down, place in a bowl and crumble up. Add the remaining ingredients and mix well. Form into 2 to 2 1/2-ounce portions. Dredge in flour and fry in a lightly oiled skillet, over medium to medium-high heat, for 2 to 3 minutes on each side, or until done.
Makes five 2-oz. or four 2 1/2-oz. fish cakes.
