Combine the chamomile and water into a small pan, bring to a boil, and reduce heat to a simmer. Simmer for 8 minutes. Strain the herbal tea, using either a fine mesh strainer, or cheesecloth, into a container wide enough for the bread to fit.
For each slice of bread, submerge the bread into the tea, and remove, allowing excess liquid to drip off. Place the soaked bread, onto a non stick sheet pan. Once all bread is on the sheet pan, bake until completely dry. At 250°F this takes about 2 hours. Flip the bread every 5-20 minutes. Pay more attention near the end as burning may occur. The bread should be completely dry and have no give. This toast should last for quite some time in a closed container, do not store in the refrigerator.
