Microwave meatloaf that is easy enough that my husband isn't even afraid to make it!
In a large bowl, mix everything but the ketchup.
Flip a small microwave safe glass upside down in a 2 qt. casserole dish. Pack the meat mixture evenly around out side of the glass. Spread ketchup on top.
Place 3 paper towels on the bottom of your microwave to absorb any spills. Place the casserole dish in the center. Next, take 2 paper towels (folded to the size 1), dampen with water and "tent" the casserole dish. This keeps food from splattering every where.
Microwave on high for 10 minutes. Let stand for 10 minutes. (The meat will be pink when it first comes out of the microwave but will continue to cook for about 10 minutes).
***You will hear a lot of sucking sounds as the glass in the center cools. This normal. A lot of the excess fat will be sucked up into the glass. Try to remove the meatloaf before the glass is completely cool because it may suction to the bottom of the casserole dish.
