Pork tenderloin with an onion and Parmesan topping
Preheat oven to 190C
Slice pork into 1/2 inch thick medallions and place in bottom of oven dish (8"x8" works well)
Evenly spread the sage, rosemary, parsley, garlic and onion over the pork
Cover with the Parmesan and pat down so the cheese forms a tight layer on top of everything else
Put in the oven and cook for 45 minutes or until the cheese starts to brown
Add the double cream and put back into the oven for 20 minutes or until the cream has formed a thick layer on top of the pork
