Suggest a better description1) With a sharp knife cut up the pre cooked costco chicken or other cooked chicken breast into small pieces
2) Combine all ingredients (but not the oil) into a large mixing bowl and fold together
3) Heat a nonstick pan on medium/high heat, add the oil when hot. When the oil is hot, spoon in the mixture one heaping spoonfull at a time. Fry 2 min (or until brown) per side. repeat process until all the mixture is gone, ok to add more oil as needed.
Note: after frying, Set finished fritters on a paper towel and let cool a few minutes before serving.
