Sausage and egg tortilla's. We serve these with a side of salad and have breakfast for dinner!
Cook the meat with the onions and then drain the crumbled sausage.
Divide the mixture between the 8 tortillas, or 10 small ones, Fill each tortilla with meat and plenty of cheese. Place seam down in a greased 9x13 dish.
Place the eggs and seasoning in a blender and blend on high until the whites are broken down. Then add the following ingredients and blend until mixed.
Pour over the tortillas, and cover.
Bake at 350* for 35-40 minutes or until the eggs are set. Add 1/2 cup of cheese and place uncovered in the oven until cheese is melted.
My family loves the maple flavored variety of breakfast sausage.
