Suggest a better descriptionWash and dry chicken breasts. Season with salt and pepper on both sides.
Heat a drizzle of olive oil in a large frying pan. Add chicken and cook on medium heat about 4 minutes each side (longer for bigger pieces of chicken). Remove chicken from pan.
Add some more oil to the pan and add mushrooms and scallions. Season with salt and pepper. Cook about 2 minutes then add chicken broth. Cook about 2 more minutes or until sauce has thickened. Turn off heat and add butter and sour cream. Taste and season with salt and pepper.
Add chicken back to pan and spoon mushroom sauce over it. Sprinkle monterey jack cheese on top of chicken and mushroom mixture. Turn heat on to low and cover pan. Serve after cheese melts.
Suggestion: Serve with mashed potatoes. Spoon mushroom mixture over potatoes as well.
